Me + Slow Cooker = Love
If I am organized enough, I try to use my slow cooker for weeknight meals. I love knowing that dinner is cooking all day long, and I don't have that mad rush right when the kids are at their worst - 5PM.
After Lulu was born, a friend called and told me to leave my slow cooker on the counter. She came, she assembled, and she left. Eight hours later, we had dinner. It was delicious. I have made this soup fairly often ever since.
Turkey Meatball and Tortellini Soup
1 bag frozen turkey meatballs
2 cans diced tomatoes with Italian seasonings
2 32-ounce boxes of chicken broth
1 box frozen spinach
Place all of the above in the slow cooker - cook for eight hours on low.
Thirty minutes before ready to serve, add one bag dried tortellini (I use Barilla Cheese and Spinach Tortellini - sold in pasta aisle).
It makes a ton, and freezes well. It also goes well with breadsticks - yummy and good - especially on a cold night.
I'm on the hunt for some good slow cooker recipes. I tried a few over winter break, and they were gross. I don't have luck with drumsticks in the slow cooker. Do you have one? Send me the link. I need some help.

I have a good recipe for Taco Soup. Also, freezes well. Don't have one for drumsticks though.

Love my crockpot too. I agree - check out the crockpot 365 blog. Great ideas.
One of our easy favorites: stick a roast in the pot, cover with a package of dry Italian dressing mix, a package of dry Ranch dressing mix, and a package of dry brown gravy mix. Add 1/2 cup of water and cook on Low all day. It's yummy!

This sounds delish! I will try with some sort of veggie protein. I've wanted to try slow cooker rice pudding...there are a ton of recipes on "the internets" but I haven't tried any to recommend.
